We went to Ohio this past week-end for my nephew Michael's wedding. We had a good week-end, catching up with family again. I didn't take a whole lot of pictures but thought I'd post some of the ones I did take.

I thought their decorations were so pretty.

sisters...My oldest sister Miriam is in the back and Eileen is on the right. She was the mother of the groom.

Now summer is in full swing. This is what's ready in my garden right now.

strawberries We've been making jam, eating shortcake, chocolate covered strawberries, strawberry milkshakes and so far I've only made one strawberry pie. But today I made these strawberry meringues. I thought I couldn't let strawberry season go by without making these at least once.

    Strawberry Meringues

     3 egg whites
    1/4 t. cream of tartar
    1/2 t. cider vinegar
    1/2 t. vanilla
    3/4 cup sugar

Place egg whites in mixing bowl and let set 30 minutes. Add cream of tartar. Beat until foamy. Add vinegar and vanilla. Beat until soft peaks form. Gradually beat in sugar, 1 T. at a time, on high until stiff glossy peaks form and sugar is dissolved. Line baking sheet with parchment paper or non-stick foil. Place meringue in pastry bag fitted onlywith coupler. Pipe circles onto baking sheet.

     strawberries
Bake at 250 for 75-80 minutes. Turn oven off and let dry in oven for 1 1/2 hours.
I often fill mine with a mixture of cream cheese, sugar and whipped topping but decided today to only put in whipped topping and the strawberries. Yum! And it's a fairly low-cal treat, too!

Yum!  the strawberry dessert looks so good!  Fresh strawberries from the field are only a memory now, although we're enjoying them from the freezer!

The strawberry treats sound delicious!! What were Michael & Lindsay's wedding colors, and what church was it held at?

  • ilovecooking

@AngelAsh_86 - Ashley, the colors at the wedding were lavendar, purple and black. The wedding was at Berlin Mennonite, and the reception was at the Holmes County Training Center pavilion.

Those strawberry meringues look sooooo good and so summery!  Can't wait to try them.  The Fried Ice Cream Dessert, thanks to you, has now become a family favorite and I'm making it again tomorrow for a get-together at my brother's.  We bring along the teddy bear honey squeeze jar and it's so cute.  Love your site ~

P.S. I meant to add yesterday - in the picture, the lady in front on the right is the mother of the groom??????  I didn't think it was possible, but she must've been 5 years old when she had him - she's definitely got some great age genes in that family!  That picture is a treasure, by the way, they all look so happy and the background was cute as well.

  • ilovecooking

@Bethrusso - Yes, the one on the right is the groom's mother! (I'm on the left) She is 7 years older than I am, and we had babies two months apart so I think she was 33 when he was born. He is number 4 out of 5. I'll have to tell her what you said. She will surely have a laugh over that!
