Recipe for the Week
I put together this dessert today in anticipation of our busy week-end coming up. We will be having company, going from wedding to spring concert, church on Sunday, baccalaureate on Sunday afternoon, Annette's choir program Sunday evening and graduation on Monday. I don't think we shall be bored!
I've made regular fried icecream before, but this is so much easier and so good, too. The creaminess of the icecream, hint of cinnamon and crunch of cornflakes paires together so well. I got the recipe from my friend Phyllis, but I also got a cookbook for Christmas that it's in. It's the Simply Wonderful Cookbook from The Honeybrook Community Church. I love this cookbook. It has lots of good recipes.Fried Ice Cream Dessert
5 T. butter
1 cup sugar
3 cups crushed cornflakes
2 qt. vanilla ice cream, softened
2 cups whipped topping
1 t. cinnamon
chocolate syrup, honey or strawberriesMelt butter in frying pan.

Add cornflakes and sugar. Fry for about 3 minutes, stirring constantly.
Pat 2/3 of this into 9x13 pan.
In a large bowl beat together ice cream, whipped topping and cinnamon.
Pour on top of crust. Sprinkle the reserved crumbs on top and freeze.
Serve with chocolate syrup, honey or strawberries. (We like it best with honey) Yield: 12-16 servings.

Holy cow - I am SOOO going to make this!!!!!!!!!!! We went to eat at a Mexican restaurant over the weekend and got a fried ice cream to go and I just ate the leftovers yesterday. This has NO frying and you made it look easy as ummmm pie? Anyway, thanks for the recipe and I can't wait to make some.
One more question, how do you beat together the ice cream, etc. - won't it be too frozen? Do you let it melt a little first? Thanks ~
That does look good! Eric and I had gotten some fried ice cream at the grocery store once but it just wasn't as good! It had a cinnamony taste, but no corn flakes! I think those help give it a good flavor. BTW, what's a baccalaureate? And I know what you mean about being busy- every Sunday this month, except the 24th, we have a graduation party to go to!

I made the fried ice cream dessert yesterday and it is A) Very easy!, and B) Very delicious - just like the restaurants, seriously. Here's the problem - you put it in a 9X13 pan and we had no place to go this weekend, so WE are eating it little by little. Shamey shame. Great recipe!
